Daal Bati Churma
# Dal Bati Churma is a traditional Rajasthani treat. A standard rajasthani delicacy recipe made up of dal, bati or wheat rolls and churma which is powdered wheat ball. it's generally served for lunch or dinner by mixing the dal with crushed baati and ghee topped thereon . it's also popular in Uttar Pradesh and madhya pradesh within the malwa regions. Baati made in tandoor is extremely tempting but it also can be prepared in oven. If baati is filled with potato-peas then it gets more appetizing.Ingredient:~
- For Dal
- Chana Dal – 1/2 cup
- Toor Dal – 1/2cup
- Moong Dal – 1/2 cup
- Urad dal – 2 tbsp
- Garlic – 1 tsp finely chopped
- Ginger - 1tsp finely choped(optional)
- Onion – 1&1/2 medium sized chopped
- Tomatoes – 1&1/2 medium sized chopped
- Chilli powder – 2 tsp
- Garam Masala - 2tsp
- Turmeric powder – 1/2 tsp
- Coriander powder – 1 tsp
- Coriander Leaves – 3 tsp finely chopped
- For Temper
- Ghee – 2 tbsp
- Cloves(long) – 2
- Cumin Seeds – 1 tbsp
- Green Chilli -2 slitted
- Hing – a pinch
- Bayleaf (dry kadipta)– 2
- ginger garlic paste(optional) - 1tsp
- For Bati
- Whole Wheat Flour – 1&1/2 cup
- Fine Sooji (Rava) – 1/2 cup
- Chickpea Flour (besan)– 3 tbsp
- Melted Ghee – 4 tbsp
- Milk – 1 cup
- Carom seed(Ajwain)– 1/2 tsp
- Salt – As Per Your taste
- For Churma
- Whole Wheat Flour – 2 cup
- Fine Rava ( Sooji)– 1/2 cup
- Melted Ghee – 6 tsp
- Cardamom powder – 1/2 tsp
- Almond Silvers – 3 tbsp
- Powdered sugar – 6 tbsp
- Melted Ghee / Oil – For deep frying
- For Platting
- thin sliced piece of Lemon
- Chopped Raw Onion
- Ghee
Recipe:~
- For Dal
- Rinse the dal's well and add that daal in pressure cooker along with a pinch of tumeric powder, salt and four cup of water. Once cooked, pressure releases, mash it well with a laddle and put aside .
- Take a pan and heat ghee . Now add the things listed under the ingredient list ‘temper’ and let it termpering(cook well).
- Add chopped onion, garlic, ginger(optional) and saute till onions turn transparent.Then add tomatoes or tomatoes purie together with red chilli, turmeric, coriander and garam masala powders and a little bit of salt because as we've already added some salt in dal. Saute for few mins until raw tadka prepare.
- Now add mashed dal and blend well. Let the dal boil for five mins,at sim temperature , add little water if its too thick.Finally garnish with coriander leaves and cut .
- For Bati
- Take a mixing bowl and also take all the ingredients listed under ‘for bati’ . Now mix well all the ingredients and Press (message) it together to form a stiff dough.
- Now Divide the dough into small balls and flatten them using your palms or belna. Make a small indentation or press it in the centre of the baatis using your thumb.
- Arrange them in a baking tray. Preheat oven at 180 deg C for 10 to 15 mins and bake in preheated oven for atleast 25 to 30 mins or until the top of bati's turns golden brown.
- Now brush hot bati's with ghee.
- For Churma
- Take a bowl , then take wheat flour, rava and ghee, add water to create a stiff dough. Make patties along with your palms or belan with a indentation or pressing a thumb at the middle .
- Heat oil / ghee and deep fry the patties in hot oil/ghee till light golden brown. Turn over and cook for perfect cooking, make sure cook in low medium flame. Drain in tissue with safety and put aside to chill down.
- when it's cool, break them into small pieces together with your hand or grind it using a mixer(make crumbs of it). put the mixture in a very bowl, add some granulated sugar as per your taste and cardamom powder and blend well.
- Now add siome Chopped almonds lengthwise together with ghee and provides a fast mix
"Time for Platting":
Heat the dal again .Break the bati's half half together with your hands and place it in serving plate, pour hot dal over it, drizzle with ghee and sprinkle chopped onions, add juice or put some sliced of lemon and a green chilli have it with churma.
