    # What is saaro ka saag?

Basically it is a classic Punjabi dish, this Sarson Da Saag recipe is gravy dish made up of mustard leaves, spinach and bathua together with Maize flour and spices. the top result's a bowl choked with aromatic, delicious and creamy green saag choked with antioxidants and nutrients.

The bathua and mustard leaves are available within the season of winters in India hence this is often largely cooked in Indian homes, especially in northern India, during the winters only.

  • Tips To Make the Perfect Sarson Da Saag

  • Ingredients:
    • Ghee-4tbsp
    • Mustard Leaves- 05 bunches
    • Spinach- 2 and a half bunch
    • Bathua (Pigweed)-02 bunch
    • Makki-Ka-Atta (Maize Flour) - 2 and a tbsp.
    • Jaggery, grated- 04 tsp.
    • Ginger- 2 inch piece

  • Recipe (in Short)
  •   NOTE~ Follow step by step!

    1. Wash the mustard leaves, spinach and bathua separately in fresh water.
    2. Roughly shred leaves and finely slice stems. Discard the hard stems.
    3. Remove and discard the stems and wash green chillies and chop them finely.
    4. Scrape, wash and roughly cut 1/2 the ginger, cut the remainder into very fine juliennes.
    5. Peel, wash and chop onions and garlic finely.
    6. Put the mustard leaves, spinach, bathua and green chillies in an exceedingly heavy bottomed pan, add chopped ginger, salt and water.
    7. Bring to a boil and simmer until tender (do not cover).
    8. Remove, drain and reserve the surplus liquid if any.
    9. Put the drained leaves during a blender and make a rough puree.
    10. Transfer the puree to the heavy bottomed pan add makki-ka -atta, red chilli powder, remaining chopped green chillies and grated jaggery. Mix well.
    11. Return to heat and add the reserved liquid.
    12. Simmer, stirring occasionally, for half-hour . Adjust the seasoning.

  • Steps to Prepare the Tadka:
    1. Heat Ghee, add small pieces of ginger with chopped onion and fry till golden brown.
    2. Saute garlic till light golden brown, add green chilies, roasted and also cumin and red chilli powder. Saute over medium heat add tomato puree(optional) saute.
    3. Bring the boiled sarson ka saag and pour on the tempering, Stir it properly.
    4. Remove to a bowl, garnish with small pieces of garlic and ginger and sprinkle garam masala powder.
    5. Serve Sarson Ka Saag hot with Makke Ki Roti with a spoon of desi ghee pouring on saag.
