"Basically, What is Phaanu?"
India's another state uttrakhand has also popular recipes. Uttrakhandi phaanu one amongst the popular food recipe of uttrakhand. Basically a Garhwali dish, but is loved by everyone in Uttarakhand.It is a lunch-time dish, also very demanding in menu of the many famous resturants, mainly prepared by soaking ‘Gahat Dal’ and other lentils overnight and cooking it in a pot. Though it has a complex preparation, for such an excellent taste, complexity loses its gravity.it basically server with steamed rice or mandua ki roti.
Ingredients:
- 1&1/2 cup gahat or kulath (horse gram)
- 6 cloves of garlic(thome)
- 1 cup mustard oil
- 2 green chillies
- 1 inch ginger
- 2 tsp cumin(jeera)
- 1/2 tsp asafoetida(hing)
- 1 tsp dry coriander(dhaniya) powder
- 1 tsp turmeric powder (haldi)
- 5 & 1/2 cups water
- salt(as per taste)
- 2 tsp Dry Mangoo Powder(amchor)
- 2 tsp garam masala
- ghee, (for garnishe)
- 2tbsp chopped coriander leaves(dhaniya), (for garnishe)
How to make it:
- Soak overnight the gahat daal in water. If using arhar daal, then u can soak it for 1-2 hours.
- In next morning wash it properly and rub the daal in water so that it's freed from seed covering (chilka). Then, grind it into a dry thick paste in a very mixer together with green chillies, garlic and ginger.
- Place a pan on a medium flame. Put some oil and make thick pancakes/appa (like pakoda) from the daal paste. Use only 1/2 the paste for making the pkkoda's.
- Now add some water within the remaining paste to making it of pouring consistency. Heat musturd oil in a pan and add jeera (cumin) seeds and hing. Now add gahat paste, turmeric powder, dry coriander powder and salt(as per your taste), dry mango powder, garam masala , Red chilli powder(optional).
- Cover it and cook the mixture for about 10 to 12 minutes on slow fire. Add the gahat cakes(pakoda's) to the gravy(daL) and still cook at sim flame for an additional 8 to10 minutes.
The gravy should have pouring consistency. If too thick, then add some more water and warmth until it boils,or cook properly. - Garnish the phaanu with pure ghee and chopped coriander leaves and a couple of 3 cloves of ginger(optional). Serve with steamed rice or mandua ki roti (recipe given below).
Mandua ki roti:~
Mandua Ki Roti is a healthy Pahari recipe that you simply can cook for your family and friends. People love to eat Mandua ki roti with Phaanu. it's quite common type roti in Uttrakhand.This easy recipe are often made at home by combining and kneading ragi flour together with spring onions, carrots, green chilli paste, curd, salt and water. This main dish recipe is mouth-watering and might be served with almost every curry dish or chutney.
Ingredients:~
- 1 cup ragi flour
- 1/2 cup carrot
- 3 cup yoghurt (curd)
- 1 crushed to paste green chilli
- 1/2 cup spring onions
- salt(as per taste)
- Garam msala
- Dry mangoo Powder
How to make it:
- To make this mandua ki roti , firstly finely chop the onion and also grate the carrots or just grind it in mixer. Now, take a mixing bowl and add the ragi flour together with chopped onion , grated carrots or the mixture you grind it and green chilli .
Now add species ~ salt (as per taste), mangoo powder, garam msala, red chilli powder(optional) and blend all the ingredients using your fingers .
Pour yoghurt within the flour and prepare a soft, pliable dough. - Now cover it with a kitchen towel and and keep it aside for some time. Heat a non-stick pan over medium flame.
- Now, divide the dough equally into many small portions( make peda). Roll each portion into a round disc, using a little ragi flour( like we do on making simple chappatis). Gently place it on the hot pan.
Cook over medium flame until brown spots start appearing. Flip the roti, cook it on the opposite side till it golden brown. Cook until each side are slightly golden brown in color. - Remove from pan and place it on a plate. Serve hot with a phaanu with slices of onion and Green chilli and slices of lemon. Enjoy!
